Broccoli Cheddar Soup
You should try making this broccoli cheddar soup recipe. It's creamy and decadent, yet still light enough to not leave you feeling heavy.
INGREDIENTS
2 tbsp olive oil
2 tbsp butter
1 onion diced
3 carrots sliced to half-circles
2 tbsp chopped fresh oregano
2 cups grated cheddar cheese
7 cups vegetable broth
3 cups chopped broccoli
3-4 bay leaves
¾ cup whole milk
½ tsp nutmeg
1 tbsp chili powder
salt + pepper
DIRECTIONS
Heat your olive oil and butter in a large, heavy-base pot until it simmers.
Add in your diced onions, and cook for 5 minutes over medium-high heat.
Add in your carrots and 1 teaspoon of salt and pepper each. Cook for 5-10 minutes, occasionally stirring, till the carrots are cooked al-dente.
Mix in your broccoli, chili powder, bay leaves, and nutmeg, and then add in your broth.
Bring this to a boil, and then cover to cook until the broccoli is tender- 12-15 minutes.
Remove the bay leaves, and blend 3/4 of the soup. Bring to a boil over medium-high heat (another 10 minutes)
Bring the heat to a low, and stir in your milk and cheddar cheese. Check the soup for salt.
Serve and enjoy!
