  • 3 ¾ cups all-purpose flour

  • 8-10 tbsp extra virgin olive oil

  • 1 tbsp active dry yeast

  • 1 tsp sugar

  • 1 tsp honey

  • 2 cups warm water

  • 3 tsp salt

DIRECTIONS

  1. Mix the honey, sugar, and warm water in a large bowl. Stir in the yeast, and let proof for 5 minutes.

  2. Stir in the olive oil. Add in the flour, then salt. Knead until the dough can be shaped into a ball- it will be sticky. [semi-sticky dough]

  3. Coat a bowl with olive oil, and place the dough inside. Cover with a towel. let rise in the fridge for at least 14 hours

  4. To a wide baking dish of your choice, add 1/4 cup olive oil and coat. Gently spread the dough [do NOT spread to all corners].

  5. Cover the baking dish with a plastic/aluminum wrap coated lightly with oil [give it space to rise, don’t let the wrap touch the dough]. Let it rise for 4 hours.

  6. Imprint your fingers into the dough to create indents. [can top with toppings at this point] drizzle olive oil and flakey salt, set aside for 20 minutes

  7. preheat oven to 450F

  8. Once the oven is heated, place the baking dish on the middle rack, and bake for 30 minutes, or till the top is golden.
