Gajar Ka Halwa

Gajar ka halwa is a delicious Indian dessert that's made with grated carrots cooked in milk and sugar, and flavored with cardamom. It's also topped with roasted nuts for some extra crunch. Trust me, it's a labor of love, but totally worth it when you share it with your loved ones. Give it a try!

CARROT HALWA

INGREDIENTS 

  • 5-6 carrots, coarsely grated (2 packed cups)

  • 3 cups milk (whole preferably)

  • 1 pinch saffron

  • 4 cardamom pods, ground

  • ¼ cup ghee

  • 20 pecans, cut into slivers (adjust to your taste)

  • 10-15 cashews, chopped (adjust to your taste)

  • 3⁄4 cup sugar

  • ½ cup almond flour (coarse if you can find it)

DIRECTIONS 

  1. Heat a wok/kadai. Once it is hot, toast your saffron and ½ of the ground cardamom powder for a couple of seconds.

  2. Add in the grated carrots and mix well before adding in your milk. Cover the pot and let it come to a boil.

  3. Meanwhile, in a separate pan, heat the ghee, toast the nuts until golden, and set aside.

  4. Once the mixture rises- remove the lid, and stir well before closing the lid. Do this four times, and then remove the lid.

  5. Stir occasionally so that the carrot mixture does not scald. You will be cooking this mixture down till the milk has evaporated.

  6. Once the milk has completely evaporated, stir the nut mixture and almond flour into the carrots. When the ghee has been absorbed, stir in the sugar.

  7. Cook well- till the mixture has completely come together. Mix the salt in, and take the halwa off the heat.

  8. Serve, garnishing with saffron, and enjoy!
