Granola

You have to try this fantastic granola! My family loves it so much that we use it instead of cereal. It's seriously the best!

Ingredients

  • 4 cups old-fashioned rolled oats

  • 2 cups nuts- I use 1 ½ cups pecans and ½ cup sliced almonds)

  • 1 tsp salt

  • 1 tbsp ground ginger

  • ½ cup melted coconut oil- or a neutral oil

  • ½ cup maple syrup or molasses

  • 1 tbsp vanilla extract

  • other toppings of choice**

Directions

  1. Preheat the oven to 350F

  2. Combine the oats, nuts, salt, and ginger in a large mixing bowl.

  3. Mix in the oil, maple syrup or molasses, and vanilla. You must mix well and make sure everything is coated.

  4. Pour the granola onto a baking tray, spreading it into an even layer. Bake for 25 minutes, stirring it halfway. If you like clumpy granola, press down when you stir the mixture halfway.

  5. Remove from the oven and let cool for an hour. Break it to the consistency you prefer and store it.

  6. This will keep for a week, sealed, at room temperature. It will last 3 months in the freezer.

**You can stir in dry fruits and chocolate chips once the granola cools.
