Kichdi

Have you ever tried Khichdi? It's a delicious dish made by cooking rice and dal together. You can use any type of dal you prefer and cook it until it's nice and mushy.

Want to make it more exciting? Add some spices and veggies to make it the star of the show! Or, if you prefer a simpler version, just keep it plain and use it as a base to showcase other dishes. Yum!

This dish is the ultimate desi comfort food! You can enjoy it with your favorite pickles, khadi, spicy garlic chutney, or even mix them all together for a flavor explosion. Yum!

Ingredients

  • ½ cup toor dal [split yellow pigeon pea lentils]

    • Sometimes i use moong dal [split green gram]

  • ½ cup white rice

    • i use basmati

  • 1 tbsp ghee + more later

  • 1 tsp salt

  • ½ turmeric

  • 2 ½ cups water

Directions

  1. Rinse the dal and rice together and place them into the InstaPot.

  2. Add in the rest of the ingredients and stir. Close the lid to the sealed position, and cook at high pressure for 8 minutes.

  3. After it rests for 15 minutes, manually release the pressure.

  4. Serve with a dollop of ghee, khadi, and garlic chutney. Enjoy!
