Makki ki Roti

This dish is absolutely delicious when topped with a generous dollop of fresh Makhan and served with a side of Sarson ka Saag or Garlic + Green Chili Chutney. Trust me, your taste buds will thank you!

Ingredients

  • 2 cups makki atta [sweet corn flour]

  • 1 cup boiling water

  • 1 tsp salt

  • warm water

  • ghee to roast

Directions

  1. In a mixing bowl, combine makki atta and salt.

  2. Stir the boiling water into the flour mixture using a spoon until it is thoroughly combined. Cover the bowl and set it aside until it cools down enough to touch.

  3. Form a dough that is smooth and firm by kneading, adding warm water as necessary. Cover the dough and let it sit for 10 minutes.

  4. Heat the tawa over medium heat.

  5. Roll golf-sized dough balls between parchment papers into rotis less than ¼ inch thick.

  6. Use the parchment paper to flip the roti onto the tawa.

  7. Over medium-low heat, roast the roti using ghee until golden on both sides.

  8. Repeat steps 5, 6, & 7 until you have sufficient rotis. Serve the rotis with a dollop of makhan, Sarson ka Saag, and Garlic + Green Chili Chutney. Enjoy!
