Mexican Pizza
This dish isn't exactly what you'd call "authentic Mexican" food. And it's not a perfect copy of Taco Bell's Mexican Pizza either. But, it's a super tasty and healthier version that you can enjoy without any guilt!
INGREDIENTS
2 premade pizza crusts
1 ½ tbsp oil
2 Thai chillies peppers, diced fine
increase/decrease to taste
1 tsp cumin seeds
5 Anaheim, diced fine
or 3 poblano peppers, diced fine
½ onion, diced small
spice Mix (combine and set aside)
2 tbsp taco seasoning
1 tsp chili powder
1 tsp coriander powder
1 tsp cumin powder
½ tsp turmeric
⅓ cup chopped cilantro
1 cup/ 8 oz. shredded pepper jack cheese
⅓ cup sliced green onions
½ cup fresh tomatoes, diced
2 cups lettuce, shredded
bean mixture (blend and set aside)
1 can (8oz) pinto beans, drained and rinsed
1 can (8oz) black beans, drained and rinsed
½ cup salsa picante
JALAPENO-CILANTRO SAUCE
Combine the following in a blender or food processor:
½ cup sour cream
1 cup cilantro, chopped
1 jalapeño
1 Thai chili
½ tsp cumin powder
2 garlic cloves
1 tbsp fresh lime juice
salt to taste
DIRECTIONS
Preheat oven to 375F
Over medium heat, heat the oil, and add in the cumin seeds and thai chillies. Once sputtering, add in the onions and Anaheim peppers, and cook till they are slightly softer.
lower the heat, and add in your spice mix- stir for 30 seconds. Add in the blended bean mixture. If you would like the dip to be creamier, you can add more salsa.
Once combined, take it off heat and set aside.
Divide and spread the bean mixture on the two pizza crusts. Top with the cheese, green onions, and tomatoes.
Bake the pizzas for 10 minutes- till the cheese is melted to your liking.
Remove from the oven, sprinkle the lettuce, and drizzle with the cilantro-jalapeño sauce.
Serve and enjoy!
