Sweet Lassi

There are numerous versions of the lassi recipe, which is a popular drink in Punjab and North India. It is a chilled yogurt beverage that is an excellent complement to spicy desi dishes. Trust me, it's the perfect way to cool down.

Ingredients

  • 3 cups chilled thick dahi- (unflavored Indian yogurt)

    • The next best substitute? Unflavored thick greek yogurt

  • 1 cup heavy cream

  • 3 tbsp sugar- powdered sugar is optimal - more to taste

  • 1 cardamom pod  

  • ¼ cup ice-cold water, optional

  • a pinch of salt

Directions

  1. Blend the sugar and cardamom pod in a blender to a fine powder.

  2. Add in about 2 tbsp of the chilled yogurt, and blend. This ensures that there are no lumps when you add the rest of the yogurt later.

  3. Add in the rest of the yogurt, heavy cream, and salt. Blend. Add water to adjust the consistency if needed.

  4. Serve, and enjoy!
