INGREDIENTS

  • 1 cup raw cashews

  • 1 chipotle pepper in adobo *

  • 2-3 dry Kashmiri/Adobe chilies

  • 1 clove of fresh garlic

  • juice of 1 lime

  • ¼ cup + 3 tbsp water, plus more if necessary

  • ¼ tsp cumin

  • ½ tsp salt

DIRECTIONS

  1. In hot water, soak your cashews and dry red chilies overnight

  2. Drain the cashews and chilies, reserving the water for use later.

  3. Blend the cashews, chilies, and the rest of the ingredients, adding in the reserved water to achieve the consistency you require.

  4. Refrigerate in an air-tight container for up to 7 days.

* Chipotle pepper in adobo is usually found in the international specialty section of your grocery stores in cans or jars.
