Elote en Vaso

Check out this easy recipe for Elote en Vaso (or Esquites) that will give you all the authentic Mexican flavor without the hassle of the cob. Trust me, it's a game-changer!

INGREDIENTS

  • 3 tbsp olive oil

  • 16-18 oz frozen corn kernels

  • ½ tsp salt

  • 4-6 cloves garlic, minced

  • 4-6 green Thai chilies, minced fine

  • ¼ cup vegan mayonnaise

  • juice of 1 lime

  • 1 tbsp chili powder

  • ¼ cup grated cotija cheese, and more for garnish

  • ¼ cup minced cilantro, and more for garnish

  • paprika for garnish

DIRECTIONS

  1. Heat oil in a skillet over medium-high heat.

  2. Directly dump the corn into the heated oil and add salt. Stir to coat the kernels with oil, and let it sit.

  3. Stir at five-minute intervals until the corn has a slight char.

  4. Add in the garlic and green chilies, and cook until fragrant.

  5. Transfer the corn to a mixing bowl and let it cool till it is not too hot to touch.

  6. Stir in the rest of the ingredients, and taste for salt and lime.

  7. Serve, garnishing with cotija, cilantro, and paprika. Enjoy!
