Khao Soi

Have you ever tried khao soi? It's a delicious noodle soup with a creamy coconut curry broth that comes from Northern Thailand, Myanmar, and Laos. You'll love the thick and rich texture of the broth!

Numerous variations exist, which encompass the method of preparing the broth, the protein source, the type of noodles utilized, and other regional differences. The following recipe is influenced by the Northern Thai style.

INGREDIENTS

  • 1 ½ tbsp coconut oil

  • 1 onion, diced

  • 1 carrot sliced

  • ½ a block of diced tofu- raw or baked

  • 6 garlic cloves, minced

  • 1-inch ginger root, minced

  • 3 tbsp Thai red curry paste

  • ½ tsp turmeric

  • 4 ½ cups vegetable broth

  • 1 cup full-fat coconut milk

  • 2-3 tbsp soy sauce

  • 2 tbsp maple syrup

  • ½ tbsp lime juice (½ a lime)

  • cilantro and green onions for garnish

  • 7 oz cooked rice noodles (optional)

DIRECTIONS

  1. In a pot over medium-high heat, heat oil till it shimmers.

  2. Add in the onions and carrots and cook till they become translucent.

  3. Mix in the garlic, ginger, and curry paste. Cook till it isn’t raw (about 1 minute)

  4. Stir in the garam masala and turmeric powder, then add the vegetable broth and coconut milk.

  5. Once it begins to boil, add in the tofu. Lower the heat to medium-low, cover, and simmer for 10-15 minutes.

  6. Stir in the soy sauce, maple syrup, and lime juice. Taste for salt, and reduce the heat to low. Cover and simmer for another 5 minutes

  7. Add in the optional noodles.

  8. Garnish with the cilantro and green onions, and enjoy!
