Lemony Orzo Soup

serves 2

Ingredients:

  • 2 tsp oil

  • 5 cups of vegetable broth

  • 1 shallot, minced

  • 6 garlic cloves, minced

  • 2 tsp crushed red pepper

  • juice of 1 lemon

  • parsley to garnish

  • ½ cup orzo, cooked to al dente

  • salt to taste

  • OPTIONAL: kale and cooked white beans

Directions:

  1. Heat oil in a medium-sized pot. Add the minced shallot and garlic with a pinch of salt. Sauté the mixture until it begins to turn translucent.

  2. Stir in the crushed red pepper and add the vegetable broth. Bring it to a rolling boil, and taste for salt.

  3. Add the cooked orzo and simmer for 10-15 minutes, partially covering the pot. You can add in the kale and white beans if you desire at this point.

  4. Turn off the heat, and stir in the lemon juice and parsley.

  5. Garnish with a crack of pepper, drizzle of olive oil, and parmesan cheese. Enjoy!
