italian penicillin/pastina soup
Need a quick and easy soup? This one's a winner! It'll warm you up on chilly days and help you feel better when you're under the weather.
Ingredients
7 cups vegetable broth
1 tbsp salted butter
1 onion, roughly chopped
2 medium carrots, roughly chopped
3 celery stalks, roughly chopped
6 garlic cloves
3 thai chillies, roughly chopped
1 ½ pastina/pearl couscous, cooked
Directions
Grab a big pot and add all your ingredients, except for the cooked pasta.
Bring it to a boil over medium-high heat and cook till the carrots are fork-tender.
Blend all the vegetables using a blender or immersion blender, and then bring the mixture back to a gentle simmer. Make sure to taste for salt.
To serve: In a bowl, add the pasta. Ladle the soup over it. Garnish with parsley, olive oil, and Parmesan cheese. Enjoy!
