italian penicillin/pastina soup

Need a quick and easy soup? This one's a winner! It'll warm you up on chilly days and help you feel better when you're under the weather.

Ingredients

  • 7 cups vegetable broth

  • 1 tbsp salted butter

  • 1 onion, roughly chopped

  • 2 medium carrots, roughly chopped

  • 3 celery stalks, roughly chopped

  • 6 garlic cloves

  • 3 thai chillies, roughly chopped

  • 1 ½ pastina/pearl couscous, cooked

Directions

  1. Grab a big pot and add all your ingredients, except for the cooked pasta.

  2. Bring it to a boil over medium-high heat and cook till the carrots are fork-tender.

  3. Blend all the vegetables using a blender or immersion blender, and then bring the mixture back to a gentle simmer. Make sure to taste for salt.

  4. To serve: In a bowl, add the pasta. Ladle the soup over it. Garnish with parsley, olive oil, and Parmesan cheese. Enjoy!
