Salsa Roja
This a super easy-ready in a jiffy-kind of a recipe. All you need are some staple ingredients and a blender.
INGREDIENT1
15 oz can of diced tomatoes - fire-roasted is even better.
1 12 oz can of diced tomatoes with green chilies.
¼ of an onion.
¼ cup of chopped cilantro (keep the stems).
3-4 Thai chilies (adjust to your spice tolerance).
½ tsp garlic powder.
¼ tsp salt (adjust this to taste).
Juice of 2 limes.
Balsamic vinegar
DIRECTIONS
In a food processor, blend the onion, cilantro, chilies, garlic powder, salt, and citrus juice
Add the tomato cans with their juices and blend.
Adjust for salt, and then add in a splash of balsamic vinegar.
Let this salsa chill for at least an hour for optimal taste. Enjoy!
