Salsa Roja

This a super easy-ready in a jiffy-kind of a recipe. All you need are some staple ingredients and a blender. 

INGREDIENT1

  • 15 oz can of diced tomatoes - fire-roasted is even better.

  • 1 12 oz can of diced tomatoes with green chilies.

  • ¼ of an onion.

  • ¼ cup of chopped cilantro (keep the stems).

  • 3-4 Thai chilies (adjust to your spice tolerance).

  • ½ tsp garlic powder.

  • ¼ tsp salt (adjust this to taste).

  • Juice of 2 limes.

  • Balsamic vinegar

DIRECTIONS

  1. In a food processor, blend the onion, cilantro, chilies, garlic powder, salt, and citrus juice

  2. Add the tomato cans with their juices and blend.

  3. Adjust for salt, and then add in a splash of balsamic vinegar.

  4. Let this salsa chill for at least an hour for optimal taste. Enjoy!
