Cornbread
You simply must try this cornbread recipe! My family can't get enough of it and I know your loved ones will feel the same way.
INGREDIENTS
1 cup all-purpose flour
1 cup yellow cornmeal
⅓ cup sugar (adjust to your preference)
1 tsp salt
½ tbsp baking soda
1 “egg”
1 tbsp ground chia seeds mixed with 3 tbsp water
1 cup milk
⅓ cup flavorless oil
1 15oz can of whole corn kernels
DIRECTIONS
Preheat your oven to 400 F.
Grease an 8in x 8in pan, and coat with flour.
Drain your corn kernels well, toss and coat with flour, and set aside.
Combine your flour, cornmeal, sugar, salt, and baking powder in a mixing bowl.
Add in your “egg,” milk, and oil. Combine well. Stir in your set-aside corn kernels.
Pour batter into the baking pan. Bake in the preheated oven for 25 minutes or until it passes the toothpick test
Serve warm with fresh butter.
