PLANTAIN STIR-FRY

Looking for a quick and easy meal? Try this delicious plantain stir fry! It's perfect with some hot rice, rasam, and a dollop of ghee. Yum!

INGREDIENTS

  • 4 plantains

  • 1 tablespoon turmeric

  • 1 tsp asafetida [hing]

  • 2 tsp chili powder

  • 2 tablespoons korivi karam (chili pickle)

    • you can use gochujang paste instead or skip it altogether.

    • if you skip this ingredient, be sure to add salt to this recipe per taste

  •  ¼ cup rice flour

  • 6-7 cloves garlic with skin

  • 2 stems of curry leaves

DIRECTIONS

  1. Peel the plantains, and slice them vertically [1/8 inch thick]. Immerse them in a bowl of water.

  2. Meanwhile, combine asafetida, turmeric, and chili powder in a bowl. Mix in water till it becomes a loose paste.

  3. Drain the plantain well. Mix in the spice paste and the Korivi Karam/Gochujang (add a tsp of salt if you skip the paste). Cover and marinate for at least 15 minutes.

  4. Mix in the rice flour.

  5. Heat a Tawa and shallow fry garlic and curry leaves until garlic is browning and the leaves are crispy. Set aside.

  6. Lay each plantain slice individually and shallow fry the plantains till golden brown on both sides.

  7. when serving: layer the finished plantain fries out and top with the garlic and curry leaves

  8. Serve with hot rasam and rice.
