Vrat Chole

No Onion No Garlic

serve with Roti, Puri, or Bhature.

Ingredients

  • 1 tbsp ghee

  • 3 tbsp oil

  • Spice Mix:

    • 2 tsp cumin seeds

    • 1 bay leaf

    • ½ tsp ground clove

    • 1 tsp ground black pepper

    • 1 tsp asafetida

    • 1 tbsp ground red chili powder

    • 2 tbsp ground coriander

    • 1 tsp ground fennel

    • ½ tsp turmeric

  • 2 tbsp chickpea flour/besan flour

  • 1 inch ginger

  • 6 Campari tomatoes

  • 1 tbsp tomato paste

  • 4 Thai green chillies

  • 2 tsp amchur powder

  • 2 tsp kasuri methi

  • 1 cup water

  • 1 ½ cup cooked chickpea

  • 4 boiled potato

  • salt

  • cilantro to garnish

Directions

  1. Blend together the tomatoes, green chilies, ginger, and tomato paste into a smooth paste. Set aside

  2. Heat the oil and ghee in a wok over medium-high heat.

  3. Roast the spices till fragrant. Add in the besan and roast.

  4. Stir in the blended tomatoes and a tsp of salt, and cook covered until the oil releases. Stir constantly.

  5. Stir in the Amchur powder and kasuri methi. Mix in the cup of water, and let it simmer.

  6. Add chickpeas and potatoes, mashing the potatoes as you add them.

  7. let it simmer, and garnish with coriander.

  8. Serve with roti or puri, enjoy!
